Carrot Cake Recipe

3 c sifted flour
2 c sugar
2 tsp salt
2 tsp soda
2 tsp cinnamon
4 eggs
3 c grated carrots
1 c raisins (I don't put them in)
1 c chopped nuts
1 1/2 c oil

Mix dry ingredients. Make a well and add beaten egg and oil. Add raisins, carrots and nuts. Mix and bake 30 min
Frost with cream cheese frosting:
8 oz cream cheese
1/2 stick butter
Beat until fluffy then add
1 1/2 to 2 c pwd sugar

This was my great Aunt's (GG's sister) recipe. She was a great cook and this is a good carrot cake!
