3 c or more shrimp, cooked and peeled
3 corn tortillas, cut in strips
1 envelope (1 1/4 oz) dry onion soup mix
1 10 oz can enchilada sauce
1 10 3/4 oz can cream of chicken soup
1 4 oz can chopped green chilies
1/2 c onions, chopped
1 4 oz can ripe olives, sliced
1/2 c sliced or whole pimento stuffed green olives
1 c sharp cheddar cheese, shredded
1/2 c pecans, chopped
1/2 c raisins

Directions:

Line 14"x8"x2" casserole dish with tortilla strips. In saucepan, combine soup mix, 1/2 c water, enchilada sauce, cream of chicken soup and green chilies. Heat thoroughly.

Pour half of the sauce over tortilla pieces. Arrange shrimp over the sauce. Sprinkle with onions. Pour remaining sauce over the onions. Mix together olives, cheese, pecans, raisins and spread over casserole.

Bake 30 minutes until bubbly (not too long) at 350º. Remove and let sit 5 minutes before serving.
