Pie Shell
1/2 cup sugar
5 T corn starch
1/2 tsp salt
2 egg yolks
2 cups milk

Directions:
Directions:
Bake the pie shell first. Stir together the sugar, starch, and salt. In a separate bowl, mix the egg yolks and milk. Add this mixture to the dry mixture. Cook over low heat until thick, stirring constantly. If lumps form, take off the stove and keep stirring. If still too thick, add just a little milk. When completely smooth, add the butter and vanilla and stir. Pour into baked pie shell.

Optional versions:
For coconut pie, add 1/2 c. coconut to butter & vanilla.
For banana pie, add 2 sliced bananas to butter & vanilla.
For chocolate pie, add 5 Tbsp. cocoa to dry ingredients.
For Pudding, use only 3 T cornstarch and pour into small bowls.

This recipe is from my mother, Wanda. She is known for her pies and is always asked for that chocolate pie! My favorite is the coconut version.
