Spice mix:
2 tsp curry powder
2 tsp chili powder
2 tsp cayenne
1 tsp salt
1 tsp ground coriander
1 tsp ground ginger
1 tsp ground cumin
1 tsp ground cinnamon

Rice:
3 c. water
1 1/2 c. basamati rice
raisins

3 T butter
1 c. chopped onion
2 minced garlic cloves
1 lb cubed chicken
8 oz plain yogurt
6 oz tomato paste
2 cans diced tomato
5 c. cubed boiled potato

yogurt sauce:
8 oz. plain yogurt
1 peeled and diced cucumber
juice of 2 limes
pinch of salt

Directions:
Directions:
Melt butter in dutch oven and saute onion and garlic 5 min. Stir in spice mixture. (Put lid on!!) Saute 5 min. Add chicken stirring to coat and cook 10 min or until cooked through. Combine 8 oz yogurt and tomato paste. Stir into pan. Add potatoes and tomatoes. Serve over rice and top with yogurt sauce.
