2 C. water (add more if needed)
2 big handfuls of spinach
1 handful of collard greens and/or kale
1 slice of fresh beet
1/2 frozen banana
2-3 handfuls of frozen mixed berries
Slice of mango (optional)
a bit of sweetener (Stevia or honey)

Directions:
Directions:
Pour the water in a sturdy blender. Add the greens and a slice of beet. Mix for several minutes until very well ground up. With the blender still running, add the fruit a little at a time. If the smoothie gets too thick, add a bit more water. Sweeten to taste. I use the herbal sweetener Stevia, which has no effect on blood sugar, but you can substitute honey or a tiny bit of sugar. Enjoy for breakfast, lunch, or snack. Watch out, you might get addicted!

When you first read this recipe you will not think it sounds appetizing, but it is actually delicious! And it's packed with power foods. What a fabulous way to get more greens into your diet! If it weren't for this recipe I would never eat beets, kale, or collards, which are packed with nutrients. I'm so addicted to this smoothie--and the way I feel when I drink it-- that I make one every day.
