¼ c shortening
2 c sugar
Grated rind of 1 lemon
¾ tsp salt
3 eggs, separated
3 ½ c cake flour
4 tsp baking powder
¼ c milk

Lemon filling:
¼ c flour
¾ c sugar
1 egg, slightly beaten
½ Tbsp butter
¼ c lemon juice
½ c water
Grated rind of 1 lemon

Directions:
Directions:
Cream shortening, sugar and lemon rind. Beat egg yolks until thick. Add to creamed mixture. Add cake flour, salt, baking powder and milk. Beat Fold in egg whites, beaten stiff. Bake in 375 degree oven for 25 minutes.

Cook filling ingredients (except butter) in double boiler until thick. Add butter and stir. Spread on cooled cake.
