Curried Chicken Trinidad Style Recipe

1 3lb Chicken
4 potatoes/ peeled and cut into 1/4's
4-5 garlic cloves/ minced or crushed
1 medium sized onion
1/2 green bell pepper
1 Tbsp chicken boullion
4 Tbsp yellow curry powder/ mix 2 Tbsp in approx 1/4 cup water, set aside
3 Tbsp cooking oil.( canola, olive ect.)
1/2 cup hot water

1. Cut up chicken in small pieces.
2. For faster prep time, blend onion, green bell pepper,chicken bullion, 2 tbsp curry powder with approx 1/2 cup water, more if needed, this is not quite down to a science!
3. Add blended ingredients to chicken. For best results it would be better to let marinade...but these days who has time. I get in to the kitchen and I want out ASAP. ...lets move on, it will taste just as good!!
4. In large enough skillet/ non stick pot/pan add oil and allow to get hot. Add crushed garlic it should start giving off a wonderful aroma, do not let it burn so move fast here... add the other two Tbsp curry you set aside, stir a few times and add your chicken and stir to coat chicken... (ok this is for my girls...when your hubby comes in, nose in the air sniffing asking how soon until dinner tell him.. "not too long sweetie but I was meaning to ask you to... fix, get, empty", or now would also be a good time to let him know about the new whatever you bought)... he will be quite happy to be his manly self here...let him....remember the way to a mans heart...blah blah blah...it really is true thats why daddy's tummy is getting bigger these days.. HA! don't forget to let him know just how whatever he did for you means and be thankful ( after he finishes the job of course.) It does take two to tango.
5. If the chicken seems a bit dry add a little water, stir, lower your heat cover and let simmer. Add the potatoes 20 mins or so before the meat is cooked,( until meat is tender.)
6. When potatoes are added make sure there is enough liquid for them to cook in. If you add too much water just uncover the pot and allow to boil down again.

It is difficult to mess up this recipe...nothing is exact, I did not add salt because of the boullion, you can always add salt to taste. NEVER add curry powder towards the end. It must cook or it will taste like ... well not good.I use Trinidadian curry powder but SAM's sell some that is quite compareable but it is more spicy so bear that in mind. Your uncle/brother Greg would be a great person to invite over for dinner when you make this.
It goes well with rice.
