1 lb. pkg. firm tofu cut into 3/4-inch pieces
2 T. peanut oil (plus 2-1/2 T. more)
3 T. soy sauce (plus 1 T. more)
3-1/2 T. light brown sugar (plus 1 T. more)
2 cloves garlic, minced
1 tsp. chopped fresh ginger
6 oz. mushrooms
1 T. rice wine vinegar
3 T. water (plus 1/2 c. more)
1 red bell pepper, thinly sliced
2 scallions
8 oz. broccoli florets

Directions:
Directions:
Drain tofu. Heat 2 tablespoons oil in a skillet over medium high heat. Add tofu, fry until lightly browned, then drain on paper towels. Mix 2 tablespoons soy sauce and 3-1/2 tablespoons brown sugar in a small bowl. Heat 1 tablespoon oil in a wok on high and add soy sauce mixture. Reduce heat to medium; add tofu. Simmer 2 minutes. Add 3 tablespoons water and cook to a syrupy consistency. Remove to a dish. Add 2-1/2 tablespoons oil to the wok. Add garlic and ginger;
stir fry for 1 minute. Add broccoli and mushrooms; stir fry for 2 minutes. Add the vinegar, 1 tablespoon brown sugar, 1 tablespoon soy sauce, 1/2 cup water and pepper. Cook 4-5 minutes, covered. Add tofu and cook 2 minutes. Garnish with scallions.
