2 lb. fresh broccoli florets, but into bite-size pieces
2 lb yellow squash, sliced
2 small onions, chopped
4 T. butter
2 large eggs, lightly beaten
1 c mayonnaise (I use fat-free)
2 to 4 c. shredded cheddar cheese
1/4 t. pepper
1/2 to 1 c. dry breadcrumbs

Directions:
Directions:
Mix soft or melted butter, eggs, mayonnaise and pepper. Add onions, broccoli and squash.

Spoon into 2 lightly greased 2-quart baking dishes.
Sprinkle evenly with breadcrumbs.

Bake at 350 degrees for 20-25 minutes or until golden.

(If you prefer softer veggies, you can steam them slightly first.)
