8 oz boneless beef sirloin steak
2 teaspoons oil
1 large onion, cut into thin rings
4 cups water
1 cup unsweetened apple juice
2 carrots, shredded
1/3 cup long grain rice
1 teaspoon ginger
1/2 teaspoon beef bouillon
3 cloves garlic; minced
2 cups coarsely chopped broccoli
2 tablespoons teriyaki sauce

Directions:

Trim fat from beef. Cut into bite-size strips.

In saucepan, heat oil; cook and stir beef and onion for 2-3 minutes or until beef is brown. Remove beef mixture with slotted spoon; set aside.

Combine water, apple juice, carrots, uncooked rice, ginger, bouillon, and garlic in same saucepan; bring to boil; reduce heat, simmer, covered 15 minutes.

Stir in broccoli and beef mixture; simmer, covered for 3 minutes. Stir in teriyaki sauce.
