1/2 cup butter
1 cup brown sugar
2 tablespoons sugar
1 egg
2 teaspoons vanilla
1 3/4 cup flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 teaspoons instant coffee powder
1 1/2 cups chocolate chips

Directions:
Directions:
Preheat oven 300º. Cream butter with sugars until fluffy; beat in egg and vanilla.

In bowl, sift together dry ingredients and beat into buter mixture; stir in coffee powder and chocolate chips.

Drop cookies by 2 tablespoon measure onto greased cookie sheet about 3 inches apart. Gently press down on dough with back of spoon to spread into a 2 inch circle.

Bake 20 minutes (a little longer for a crispier cookie)
