1 (10 oz.) pkg. frozen
1/4 c. butter
chopped spinach
1 1/2 t. minced onion
2 T. flour
1/2 t. salt
2 beaten eggs
1/2 c. fine bread crumbs
1 (3 oz.) pkg. cream cheese
1/4 c. butter
3/4 c. American cheese
1/3 c. Parmesan cheese

Directions:

Microwave spinach in 1 1/2 quart covered dish on High for 6 minutes, stirring once halfway through. Drain. Stir in flour, then eggs, cubed cheese, butter, onion and salt. Mix well. Cook on High 9-11 minutes, stirring twice. Measure bread crumbs into a 1 c. measure. Add 1/4 c. melted butter. Stir crumbs until well coated. Sprinkle crumbs over spinach mixture. Top with Parmesan cheese. Brown if desired.
