2 Tbsp butter
1 Tbsp onion, minced
1 c long grain rice
1 1/2 c chicken broth
1/4 c lemon juice
Zest & finely grated rind of 1 lemon
2 Tbsp currants (opt)
1/4 c slivered almonds, toasted

Directions:
Directions:
In a 2 quart saucepan, melt butter and saute onion until transparent. Add uncooked rice and stir to coat grains with butter. Stir in chicken broth, lemon juice and zest/rind. Bring to a boil, then immediately turn heat to low and simmer for 15-20 minutes covered. When almost all liquid is absorbed, stir in currents (opt). Continue simmering covered, until all liquid is absorbed. Remove from heat and add toasted almonds just before serving.
