Ingredients:  
1/2 C oil, 3/4 C brown sugar, 2 eggs, 3 C quick oatmeal, 2 t baking powder,1 t salt, 2 C milk, 1 t cinnamon, 1 T vanilla.

Directions:
Directions:
Mix together oil, brown sugar, eggs. Add oatmeal, baking powder, salt, milk, cinnamon and vanilla. Pour into a greased 13 x 9 inch baking dish. Cover and refrigerate overnight or until milk is completely absorbed. Bake at 375º for 25 min. Serve warm with milk. Note: for 8x8 or 8x10 inch pans, bake at 350º for 25-30 min.

This is very good on a cold morning. Excellent dish if your kids are finicky about eating oatmeal.
