1 ripe pineapple
1 medium red bell pepper
1 medium yellow bell pepper
1 poblano chili
1/2 - 1 scotch bonnet chili (or other hot chili)
1 Tbsp. minced candied ginger
1/2 medium red onion, finely chopped
1/2 c. fresh cilantro chopped
3 Tbsp. fresh lime juice
1 Tbsp. firmly packed light brown sugar.

Heat grill to high. Peel and core pineapple then cut lengthwise into 8 pieces. Seed bonnet chili (or substitute habanero or jalapeņo) and mince. Arrange pineapple, peppers & poblano chili on hot grill turning until charred on all sides (8 to 12 minutes). Let cool. Cut the cooled pineapple into 1/2" pieces. Stem and seed peppers then cut into 1/2" pieces. Add all ingredients together in serving bowl and toss gently to mix. Serve within 3 hours after making.
