12 oz shells
1-1/2 lb. ricotta cheese
8 oz. Mozzarella cheese finely grated
2 eggs, slightly beaten
1/2 tsp. salt
1 tsp. chopped parsley
1/4 C grated Parmesan cheese
3 C spaghetti sauce
1/8 tsp.pepper

Cook shells in boiling salted water for 12-15 minutes. Drain well & dry in a single layer on paper towels. Combine ricotta & mozzarella cheeses with eggs & blend with salt, pepper & parsley. Fill the shells with the cheese mixture. Spread a thin layer of sauce in baking dish. Place the shells in the dish and cover with remaining sauce. Sprinkle with grated cheese and cover with foil. Bake at 350ºfor 25-30 minutes.
