1 large tomato
1 cup shredded mozzarella cheese
12-16 pepperoni slices or 1 cup crumbled, cooked sausage
Pizza seasoning or spice (or you could do your own and use garlic, onion powder, oregano, basil)
Cooking spray

If you want you can add a slice of onion and ring of green pepper...just add the carbs
How To Prepare: Line a cookie sheet with foil and spray with cooking spray or drizzle with olive oil (the foil means you don't wash the pan!)


Make 4, 1/3 inch slices from the tomato
(if you use onion, put the onion on the bottom-must be a full slice not rings..then pepper on top of the tomato)


Place the tomato on the cookie sheet making four "crusts".


Sprinkle the tomato with the pizza seasoning, add your meat and cheese evenly. Bake at 425 for 15 minutes or until cheese starts to turn golden.


You have to eat it with a fork and a knife, but it is so good and actually filling. Watch your meat and cheese carbs..try to find a '0' carb cheese and Hormel pepperoni is 16 slices for 1-2 carbs. Enjoy!
