2 lbs. chicken breast, cubed
½ c. flour
¼ c. olive oil
1 can pineapple chunks
1 c. brown sugar
2 Tbsp. cornstarch
¾ c. apple cider vinegar
1 Tbsp. soy sauce
¼ tsp. ground ginger
1 chicken bouillon cube
1 large green pepper, cut into pieces

Directions:
Directions:
Coat chicken with flour and fry in oil until brown, and put in a casserole dish. Drain pineapple and reserve liquid.. Add enough water to the reserved pineapple juice to fill 1 ¾ c. In a small pot, combine pineapple juice & water, brown sugar, cornstarch, vinegar, soy sauce, ginger and bouillon cube. Heat until it thickens. Pour the sauce over the chicken. Bake covered for 20 minutes at 350 degrees. Add the pineapple chunks and green peppers to the pan, and return to the oven, uncovered for 20 more minutes.
