1 medium onion, chopped fine
1/2 c. carrots, chopped fine
1/2 c. celery, chopped fine
2 tbsp. butter
1/3 c. flour
2 c. chicken broth
12 oz. beer, room temperature
1/2 lb. crabmeat
1 tsp. ground cumin
1/4 tsp. nutmeg
Salt and fresh ground black pepper to taste
4 oz. sharp cheddar cheese, grated
Sour cream

Directions:
Directions:
Saute the vegetables in the butter over medium heat until they are soft, about 10 min. Stir in the flour and cook 2 min. longer. Gradually stir in the chicken broth and when the mixture thickens, stir in the beer. Add the crabmeat and seasonings and mix well. Lower the heat and add the grated cheese, a handful at a time, stirring until it is melted. Serve in warmed bowls or tureens and garnish each serving with a dollop of sour cream.
