Chicken Salad Recipe

1 whole cooked chicken
2 c celery, chopped
1 sm onion, chopped
1 c cashew halves
2 c seedless grapes (cut in half)
1 c pineapple tidbits (cut in half)
tsp pepper
1 tsp salt
1 c Miracle Whip or Mayonnaise
4 Tbsp lemon juice

Cook chicken, take off skin and de-bone. Cut into bite size pieces. In a separate bowl, add lemon juice to miracle whip or mayonnaise. Add salt & pepper. In a large bowl, add chicken, celery, onion then fold in dressing mixture. Refrigerate overnight and add the fruit and nuts right before serving. Can serve on cantaloupe half, croissant or lettuce leaf.
