3 cups flour
1 3/4 cup sugar
1 t/ baking soda
1 t. salt
1 t. ground nutmeg
1/2 t. ground cinnamon
1/4 baking powder
3 eggs
1/2 cup applesauce
1/2 cup canola oil
2 t. vanilla extract
2 cup shredded zucchini
1 cup chopped walnuts (opt.)
1 cup semisweet chocolate chips

Directions:
Directions:
Combine the first 7 ingredients. In another bowl beat eggs, applesauce, oil, and vanilla. Stir into dry ingredients just until moistened. Fold in zucchini, nuts and chips. Divide batter between two 9x5" loaf pans. Bake at 350º for 55-60 minutes until a toothpick inserted in center comes out clean. Cool for 10 minutes before removing from pans to wire rack to cool completely. Enjoy.
