1 pkg. peas
3 tbsp. canola oil
2 tsp. salt, or to taste

Pour peas into a saucepan. Rinse thoroughly in water. Then cover with water and add oil and salt. Bring to a boil. Reduce to low. Cook approximately 30 minutes. Test for doneness by pulling out a few peas and tasting for tenderness and salt.

These were Lauren's favorite peas. They are called "Cream 40's", a smaller type of white acre pea, and are tiny light-green peas that make a light "soup"...an excellent and easy vegetable to prepare. The Farmer's Market always had Cream 40's available during late spring into summer. Grandmother always made me put some up "...for Lauren".
