2 cups all purpose flour
1 cups sugar
3 teaspoon ground cinnamon
2 teaspoon baking soda
teaspoon salt
3 eggs
cup applesauce
cup vegetable oil
1 teaspoon vanilla
2 cups grated carrots
1 med tart apple, peeled and grated
1 8 oz can of crushed pineapple, drained
cup flaked coconut
cup raisins (optional)
cup chopped nuts

In a large bowl, combine first five ingredients. In another bowl, combine eggs, applesauce, oil and vanilla. Stir in carrots, apple, pineapple, coconut, raisins and nuts. Mix with dry ingredients, blend well. Fill greased or paper-lined muffin cups 2/3 full. Bake at 350 degrees for 20-24 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire rack to cool.
