1 9 inch Pastry shell
1/2 lb bulk spicy pork sausage
1/2 cup chopped onion
3/4 cup peeled tart apple
1 T. lemon juice
1 T. sugar
1/2 t. crushed red pepper flakes
1 cup shredded cheddar cheese
3 eggs
1 1/2 cup half and half
1/4 t. salt
Ground black pepper

1. Preheat oven to 425º.
2. place foil inside of pastry shell; partially fill with uncooked beans or rice. Bake ten minutes. Remove beans or rice; continue bakingpastry for 5 minutes or until lightly browned. Let cool.
3. Reduce ove ntemperature to 375º.
4. Crumble sausage into large skillet; add onion. Cook over medium heat until meat is browned and onion is tender. Spoon off and discard pan drippings.
5. Add apple, lemon juice, sugar and chili pepper to skillet. Cook on medium-high, stirring constantly, 4 minutes ofr until apple is just tender and all the liquid is evaporated. Let Cool.
6. Spoon sausage mixture into pastry shell; top with sheese. Whisk eggs; half and half, salt and dash of pepper in medium bowl. Pour over sausage mixture.
7. Bake 35 to 45 minutes or until filling is puffed and knife inserted in center comes out clean. Let stand 10 minutes before cutting.
