Ingredient amounts depend on how many you wish to make.

Cut the jalapeño peppers, in half, lengthwise and scrape out the seeds and veins. Stuff the pepper halves with softened cream cheese. Wrap each one with 1/2 of a slice of bacon. You may need to use a toothpick to hold bacon in place. Place peppers on a baking pan.

Preheat oven to 350º and bake for approximately 20 minutes, or until bacon is done. Pull from oven and place a small slice of cheddar cheese on top. Place back in oven for 3- 5 minutes or until cheese melts on top. Remove and serve.

Our good friend Allen Hinton was kind enough to share this recipe with us. Allen has become our unofficial chef at church and is always coming up with recipes like this for us to enjoy. This is one of my favorites.
