CUPCAKES:
3 c. all-purpose flour
2 c. sugar
1/2 c. cocoa
1 tsp. salt
2 tsp. baking soda

2/3 c. oil
2 c. water
2 Tbsp. vinegar
2 tsp. vanilla

FILLING:
8 oz. cream cheese
1 egg
1/3 cup white sugar
1/4 tsp. salt
1 pkg. (6 oz.) mini-chocolate chips
Directions:

Mix cupcake ingredients. Fill cupcake papers 2/3 full.

Mix filling ingredients and drop one heaping tsp. of the filling into each cupcake.

Bake at 350º for 25 minutes.


This is Marna's recipe. Frost as desired. Normally we don't frost at all. Great for kids on the go.
