6 medium red potatoes, skins left on
olive oil
3 tsp. coarse salt
2 tsp. ground pepper
1/3 c. fresh rosemary or 3 T. dried rosemary

Ranch Potatoes Variation:
Substitute melted butter for the olive oil. Toss potatoes with enough butter and dry Ranch Salad Dressing mix to coat. Roast as directed below.

Preheat oven to 350 degrees. Cut potatoes into 1 1/2 inch cubes and blot dry. Coat with olive oil. Sprinkle with the salt, pepper, and rosemary and toss well. Roast potatoes in a shallow pan or cookie sheet until tender and lightly browned, about 1 hour.
