2 c crushed vanilla wafers
4 T melted butter
1/4 tsp Cinnamon
1 tsp lemon juice

Filling:
3 8oz pkg cream cheese
4 T flour
1/4 tsp salt
4 eggs separated
2 egg yolks
1 c heavy cream
3/4 c sugar
2 T lemon juice
3/4 c crushed pineapple- drained (optional)

Directions:
Preheat oven to 325º. Butter side and bottom of a 12 inch spring form pan. Take some of the cookie crumbs and dust pan. Combine remaining filling ingredients and mix until well blended. Take crumb mixture and form to sides and bottom of the pan. Do side first. Set aside.

Beat softened cream cheese until fluffy. Add sugar, 6 egg yolks, salt, flour, and heavy cream, lemon juice and pineapple one at a time, mixing after each addition. Beat 4 egg whites to soft peaks and fold into cream cheese mixture. Some lumps are fine. Pour into prepared pan. Place on cookie sheet. Bake 45 minutes to 1 hour or until cracks start to form. Turn off oven and leave 30 minutes. Remove from oven and let cool then remove ring on pan.
