3 tbsp cooking oil
3 lbs beef stewing meat cut in 1" pieces
flour, salt and pepper
1 cup carrots, chopped
1 cup celery, chopped
1 cup onion, chopped
2 tbsp minced parsley
1/2 tsp thyme
1 tbsp Worcestershire sauce
1 bay leaf
1 tbsp flour
1 (12 oz) package 1/2 inch noodles

Heat oil in dutch oven. Roll beef in flour, seasoned with salt and pepper then brown in oil. Cover with water and simmer 1 1/2 hours. Add carrots, celery, onions, parsley, thyme, Worcestershire sauce and bay leaf. Simmer 40 minutes. Remove 1/2 cup of broth from the pot and mix in 1 tbsp of flour. Add thickened mixture back to broth and bring to a boil. Cook noodles according to package directions. Spoon stew over hot noodles.
