3 c. reduced sodium vegetable broth or water
1 1/2 c. brown basmati rice
1 1/2 tbsp. olive oil
1/2 tsp. salt
1 1/2 c. chopped fresh cilantro
1 tsp. lime juice

Directions:
Directions:
1. Combine broth or water, rice, and oil in medium saucepan and bring to nearly boil over high heat. Reduce to a simmer, cover, and cook about 50 minutes or until liquid is absorbed and rice is tender. Remove from heat and let stand 10 minutes.
2. Season with salt and freshly ground black pepper to taste. Add cilantro and lime juice and fluff rice with fork.

This is a fresh change to white rice and goes great with Mexican food. I buy the rice in bulk at our local grocery store and follow the directions for cooking with what comes with it, rather than following these directions.
