2 c. sugar
2 1/2 c. flour
2 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1 c. cooking oil
2 eggs
1 tsp. vanilla
4 c. apples, diced
1 c. nuts, chopped
6 oz. butterscotch chips

Directions:

Sift together sugar, flour, baking powder, baking soda, salt, and cinnamon. Add oil, eggs, and vanilla. Beat at medium speed with mixer. Batter will be very stiff. Add apples. Mix until well blended. The batter will be less stiff, but the apples will still be in small chunks. Add nuts and mix. Pour batter into 9 x 13 inch greased pan. Sprinkle chips on top of batter (try chocolate chips instead of butterscotch). Bake at 350° for 50-60 minutes. Tester should come out clean.
