2 bell peppers (green)
2 c. mozzarella
8 thawed, frozen boneless skinless chicken strips
parmesan
garlic to taste
olive oil

Directions:
Directions:
Quarter peppers to shape them as "boats" and cut off edges. Spray with olive oil (or brush on). Place a piece of chicken on each pepper and season to taste. Bake at 400º for 20-25 min. or until chicken is done. Add mozzarella, parmesan and garlic powder and bake for 5 more minutes.

Only 140 calories, 6 g. fat, and 2 carb per boat. You can also used sliced mozzarella in place of shredded.
