1 large onion, chopped
1 green pepper chopped ( I left out the pepper, Ernie hates it )
1 bunch green onions chopped
2 cloves garlic minced ( I used 3 small ones )
½ pound mushrooms, cleaned and sliced ( Rachel Ray, the cutie pie on Food network says just wipe them off with a damp rag- saves lots of time over washing them )
15 oz can stewed tomatoes
¼ C chopped chilies
1 tsp chilli powder
1 tsp Cajun spice mix ( see below )
¼ C chopped fresh cilantro or parsley
dash or two Tabasco sauce
4 C cooked brown rice ( I used more like 2 C rice )

Cajun Spice Mix

3 Tbsp paprika
2 tsp onion powder
2 tsp black pepper
2 tsp white pepper
2 tsp cayenne
1 tsp dried oregano
1 tsp dried ground thyme
½ tsp celery seed

Mix together and store in a tight container.

Saute 1st 6 ingredients in water for 5-10 minutes, until soft.
Add next 6 ingredients and mix thoroughly. Add cooked brown rice. Heat through and serve.
