Mashed Potatoes Recipe

4 large potatoes
4 T butter
1/2 c milk
Salt and pepper to taste

1. Wash and cut up potatoes (peel if you don't like it in your mashed potatoes, but remember you are peeling away vitamins)
2. Place potatoes in a medium size saucepan and cover them with water. Add about 1 T of salt as they will boil at a higher temperature and cook faster. Cook over medium high heat for 20-30 minutes or until tender when pierced with a fork. (The smaller you cut the potatoes the quicker they cook and cut them into the approximately the same size pieces, so they cook at the same rate)
3. Drain off water from potatoes
4. Add remaining ingredients and mash with a potato masher or mix with a mixer until almost smooth (we like a few potato chunks in ours)

I usually use one large potato for each person I am cooking for and 1 T of butter for each potato. Just keep adding milk until you get the consistency you like.
