1 Cauliflower cleaned and cut in floret hunks
1/3 stick of butter (room temperature)
salt and pepper to taste
1/2 cup half and half
(1 small pod roasted garlic optional)

Directions:
Directions:
Boil cauliflower until fork tender. Drain and put in big bowl, add butter, use a potato masher and begin mashing like a potato....add half and half a little at a time (use more of less cream depending on size of cauliflour....should be the consistency of mashed potatoes. add salt and pepper to your taste ( I use a lot of both) the roasted garlic should be used only if you like garlic mashed potatoes.

Use cauliflower in place of potato if you are carb conscious. Look for the cauliflower salad recipe....same way you would make a potato salad but use cauliflower instead.
