2 zucchini, trimmed and cut into 1/2-inch pieces
12 white button mushrooms, brushed
clean (optional)
1 large red onion, cut into 1/2-inch pieces

1 red or yellow bell pepper, seeded and cut into
1/2-inch pieces
1/2 cup (125g) Tuscan grilling paste or Italian dressing
Salt and freshly ground pepper, to taste
Tuscan grilling /ro dressing drizzle, to taste

Thread the zucchini onto 6 metal skewers, alternating with the mushrooms, red onion and bell pepper and dividing them equally. Brush the vegetables with the grilling paste and season with salt and pepper.

Preheat a grill pan over medium-high heat. Arrange the skewers on the pan. To speed the cooking process, lay a piece of aluminum foil loosely over the vegetables, if desired. Cook, turning occasionally, until the vegetables are nicely grill-marked and tender-crisp, 3 to 4 minutes per side (2 to 3 minutes if covered with foil).

Transfer the skewers to a warmed platter. Sprinkle grilling drizzle over the vegetables and serve immediately. Serves 6.
