1 head lettuce
1 bag baby spinach
¾ lb. sliced mushrooms
¾ lb. shredded Swiss cheese
1 thinly sliced purple onion
1 can honey roasted cashews
12 oz. package bacon, browned

Dressing
1/3 cup white vinegar
1/3 cup sugar
1 T. mustard
¾ tsp. salt
¾ Tbsp. grated onion
¾ c. vegetable oil
¾ Tbsp. poppy seeds

Directions:
Directions:
Clean and tear the lettuce into bite sized pieces. Snip off the spinach stems. Clean the lettuce and spinach. Soak in ice water. Dry greens in the salad spinner.

Dressing:
Add all ingredients except oil and poppy seeds in a blender or food processor. Slowly add the vegetable oil. Add poppy seeds last.
