2 cups grated sharp cheese
1 & 1/4 cup plain flour
1/2 cup butter softened
1/4 t. ground cayenne pepper (optional)

36 green pimento stuffed olives or medium black olives, drained

Directions:
Directions:
Mix the cheese, flour & butter into a dough. Refrigerate dough for 30 minutes so it will be easier to work with. Wrap about a tablespoon of dough around an olive & roll into a ball. At this point these may be frozen a few days before you need them & baked just before serving.
If you need them right away, refrigerate the olive balls for about an hour. Place on a foil lined baking sheet (dull side up) & bake @ 400 for 15 minutes.
