Lazy Day Cobbler Recipe

1 stick butter or margarine (4 oz.)

1 c. sugar
1 c. all-purpose flour
1 1/2 tsp. baking powder
1/4 tsp. salt
3/4 c. milk

4 c. (No. 2 can) fruit (cook's choice)
1/2 c. sugar


Preheat oven to 350. Place butter in a deep 2 1/2 quart baking dish and melt in preheating oven.

Mix remaining ingredients, except fruit and 1/2 cup sugar, into a smooth batter. Pour batter over melted butter, but do not stir. Place fruit over the batter.

Sprinkle with one-half cup sugar. Bake for 30 minutes.

Note: Batter will rise to the top through fruit. You may used canned fruit or fresh blueberries, sliced peaches or apples.

Mom said if she'd had this recipe when we children were growing up, it would have saved her a lot of time.
