1 9-inch pastry, baked and cooled
3/4 c. confectioners' sugar
1/2 c. peanut butter

2/3 c. sugar
1/3 c.cornstarch
3 egg yolks
2 1/2 c. milk

2 Tbsp. butter
1 tsp. vanilla

3 Tbsp. sugar
1 Tbsp. cornstarch
1/2 c. water
3 egg whites

Directions:

Blend confectioners' sugar with peanut butter and sprinkle into pie shell.

Combine next four ingredients in saucepan. Cook
on medium heat, stirring until it thickens.

Remove from heat and add butter and vanilla. Stir and pour into pie shell.

In saucepan combine 3 Tbsp. sugar, 1 Tbsp. cornstarch, and 1/2 cup water. Cook until thickened. Cool slightly while beating egg whites.

Fold cornstarch mixture into egg whites. Spread over hot filling, seal edges and bake at 350º for 12-15 minutes or until brown.
