Creamy Peach Ice Cream Recipe

1 c. sugar
1/4 c. all-purpose flour
1/4 tsp. salt
1 c. whole milk

3 eggs, lightly beaten
1 1/2 Tbsp. vanilla
1/2 c. sugar

3 c. peeled, chopped peaches

2 c. whipping cream
2 c. half and half

(1 box ice cream salt for freezer)

Combine 1 cup sugar, flour and salt in a large heavy saucepan. Gradually add whole milk, stirring until smooth. Cook mixture over medium heat until thickened (about 10 min.), stirring constantly.

To keep from curdling eggs, gradually stir 1/4 of hot mixture into beaten eggs; add this egg mixture back to the original remaining hot mixture, stirring constantly. Then, cook over medium heat, stirring constantly, about 1 minute.

Remove from heat. Stir in vanilla. Cool completely in refrigerator. (Can be made the day before.)

Combine peaches with remaining 1/2 c. sugar and mix well. May need more sugar to taste depending on sweetness of peaches. Let stand 5 minutes.

Combine cooked mixture, peach mixture, whipping cream and half and half. Mix well. Pour into freezer can of a one gallon electric freezer. Freeze according to manufacturer's instructions. Pack freezer with additional ice and salt; let stand 1 hour before serving.

We've made this for Gina's birthday since 1986! It can also be converted to strawberry ice cream by substituting 3 cups of crushed strawberries for the peaches.
