3 cups shredded cheddar cheese
1 ½ cups cut-up cooked chicken
¼ cup chopped onion
1 pkg. (10 oz) frozen broccoli
thawed and drained
(or any leftover vegetables)
1 1/3 cups milk
3 eggs
¾ cup Bisquick baking mix
¾ tsp salt
¼ tsp pepper

Directions:
Directions:
Saute the chicken, onion and broccoli until vegetables are cooked and softened. Mix 2 cups of the cheese, the chicken, onion and broccoli mixture together and pour into greased pie plate.

Beat together the remaining ingredients, except for the last cup of cheese, until smooth about 15 seconds in the blender on high or 1 minute with hand beater or whisk. Pour into pie plate over chicken.

Bake at 400º until knife inserted in center comes out clean – approx. 25 – 35 mins. Top with remaining cheese. Bake until just melted. Cool for 5 – 10 minutes. Serve warm.
