1 # Mostaccioli
1/4 Cup Olive oil
1/2 Cup Red Onion, diced
3/4 Cup Mushroom, sliced
3/4 Cup Green Pepper, diced
1 1/2 Tsp. Garlic, chopped
2 Tbls. Basil Leaves
1 1/2 Tsp. Oregano Leaves
8 oz sliced pepperoni
3 Cups Marinara Sauce
2 Cups Mozzarella Cheese
1/4 Cup Grated Parmesan Cheese
Salt and Pepper to taste

Cook mostaccioli according to package. Preheat oven to 350. Heat olive oil in large skillet. Saute' onions, mushrooms, peppers and garlic for 4 minutes. Season vegetables with basil, oregano, salt and pepper. Add pepperoni to vegetable mixture and cook 6 minutes more. Remove vegetable and pepperoni mixture from heat and mix with warm Marinara sauce.
To make casserole
Put pasta (cooked and drained) in large mixing bowl. Pour sauce/vegetable mix over pasta. Mix together well. Pour mixture into a casserole baking dish. Sprinkle casserole with mozzarella and Parmesan cheese. Bake approximately 25 minutes. Let stand for 5 to 10 minutes before serving with your favorite bread.
