2 tazas de perejil medido en forma suelta
2 dientes de ajo
1 tajada de pan de molde blanco
2 cucharadas de vinagre de vino tinto
4 anchoas
½ cucharadita de mostaza Dijon
2 cucharadas de alcaparras, enjuagadas y escurridas
sal y pimienta
½ taza de aceite (mezcla de vegetal y oliva) o todo de oliva (al gusto)

Remojar el pan en vinagre. Poner las hojas de perejil en el procesador (o licuadora) y echar allí el pan remojado en el vinagre, las anchoas, los ajos, la mostaza y alcaparras. Procesar o licuar y luego a pocos el aceite. Sazonar con sal y pimienta.
