3 lbs potatoes (about 8) peeled and quartered
8 oz shredded cheddar cheese
1 teaspoon salt
1/2 teaspoon pepper
6 cups sliced onions
butter
1 box jumbo shells, cooked until tender-firm and cooled under running cold water

Directions:
Directions:
Cook potatoes until soft; drain. Add cheese, salt & pepper and mash until smooth.

Melt butter in large skillet; add onions and cook 10-15 minutes until tender, but not browned. Spread 1/2 the onions over the bottom of a 13 x 9 baking dish. (use two pans)

Stuff each shell with heaping tablespoon of potato mixture close edges.

Arrange a single layer over onions, spread remaining onions on top.

Bake at 350º uncovered 15-20 minutes to until heated.
