1 1/4 lb. beef sirloin
1/4 tsp. salt
1/4 tsp. pepper
1 Tbsp. canola oil

1 Tbsp. fresh ginger, minced
3 stalks celery, cut into 1/2 inch pieces

2 bunches watercress, trimmed and washed

1 Tbsp. toasted sesame oil
1 Tbsp. rice vinegar
1 Tbsp. soy sauce

Directions:

Season beef with salt and pepper; cut into 2-inch strips about 1/4 inch thick. Heat oil over medium-high heat in a large skillet. Add beef to skillet; cook, tossing occasionally, until brown, 2-3 minutes.

Transfer to a plate. Reduce heat to medium. Add ginger and celery; cook until celery is soft (about 4 minutes).

Add watercress; toss until wilted (about 1 minute).

Return beef with any juices to skillet; stir in toasted sesame oil, rice vinegar, and soy sauce.

Serve over rice.


If the grocery store doesn't have watercress, I substitute frozen or fresh spinach. I also add extra ginger because I love the flavor.
