Pumpkin Ginger Bread Pie Recipe

Non stick cooking spray
1 c. canned pumpkin
1/3 c. sugar
2 Tbsp. Pumpkin pie spice
1 egg, slightly beaten
c. half and half
1-14.5 oz. pkg. Gingerbread cake mix
Whipped cream or ice cream

Preheat oven to 350.
Coat an 8X8 baking dish with cooking spray.
In a bowl combine the pumpkin, sugar, and spices. Add egg.
Mix and slowly add half & half, mix well.
Prepare gingerbread according to directions on pkg.
Pour the batter into pan. Lightly spoon pumpkin mixture over the cake batter.
Swirl gently using a knife.
Bake 50 mins, or until knife comes out clean in the cake portion.
Cool and serve warm with ice cream or cool whip.
