Mint Meringues Recipe

2 egg whites
pinch of salt
1/2 tsp. cream of tartar

3/4 c. sugar
1 pkg. (6 oz.) mint chocolate chips (mini, if you can find them)
few drops green food coloring

Directions:
Directions:

Beat egg whites, salt and cream of tartar until frothy. Add sugar a little at a time, and beat until stiff peaks form.

Fold in chocolate chips and food coloring. Drop on cookie sheet covered with waxed paper.

Preheat oven to 375º. Turn oven OFF and put cookies in. Leave in overnight. Don't peek until morning!


If you can't find mint chocolate chips, substitute by adding 1/2 tsp. of peppermint extract. Fold the extract in with the food coloring.
