1 c. vegetable oil
4 large eggs
1 c. sugar
2 tsp. baking powder
3 c. flour
1 tsp. salt
2 tsp. almond extract
2 c. chopped walnuts
2 T. poppy seeds
chocolate for dipping (optional)

Directions:
Directions:
Preheat oven to 350 degrees. In a large mixing bowl combine oil, eggs, and sugar. Mix by hand. In a separate bowl combine the baking powder, flour, and salt. Mix well. Add the flour mixture to the egg mixture and mix well. Next add the almond extract, walnuts, and poppy seeds, blending after each addition. Batter will be stiff. Spray a 9x13 pan with cooking spray. Spread batter into pan and bake 20 to 30 minutes, until golden. Let cool. Remove from pan and cut into 3/4 inch slices. Spray cookie sheet with cooking spray and place slices on sheet. Bake 10 to 12 minutes until firm. Remove from oven, turn slices over, then bake 10 to 12 minutes more. Mandelbrot should be firm to the touch. These cookies get better after a few days. If desired, one end of each cookie can be dipped in melted chocolate. They are also delicious plain.
