2 pkgs dry yeast ( 1 pkg = 1 Tb)
½ c. shortening (butter flavor)
1/4 c. warm water
½ c. sugar
3 large eggs, well beaten
2 tsp. salt
4 ½ c. flour

Directions:
Soften yeast in 1/4 cup warm water. Let stand 10 minutes. Combine dissolved yeast, eggs. 2 ½ cups flour , 1 cup water, shortening, sugar, and salt into mixer. Beat until smooth. Add remaining flour to make a soft dough. Cover. Let rise until double In bulk. Punch down and refrigerate overnight. Three hours before baking, roll out as desired . For dinner rolls, divide dough in half. Roll each half into a ½” thick rectangle. Spread with butter. Starting with the long side, roll up jelly-roll style. Cut into 12 equal slices. Place in greased muffin tins. Cover to let rise about 2 hours. Bake in 400º oven for 10 - 12 minutes. Do not over bake.
Variations:

(1) Orange Rolls
½ cup butter, melted
½ cup sugar (Plus a little more)
rind of 1 orange , grated

Combine ingredients and spread on dough. Handle as cinnamon rolls.
For frosting mix powdered sugar with the juice from the orange and a sprinkle of salt. Ice while hot.

(2) Garlic Parmesan Bread Sticks

Follow basic recipe exactly up to taking dough from the refrigerator 3 hours from baking. Now pinch off small pieces of dough. Roll between hands to form slender sticks. Put on greased baking sheet. Shake lightly with garlic salt. Shake heavily with Parmesan cheese. Let rise until not quite double in bulk. Bake at 400 degrees for 10 - 12 minutes. Yield 4 dozen


Make rolls ahead and freeze either in dough form or baked form. Reheat baked rolls wrapped in foil.
